What makes this chocolate mug cake the BEST EVER?

Coarsely chopped pieces of chocolate run through the mug cake, and when melted in the microwave, add the most incredible mouth feel! Instant coffee is another game changer, and is commonly added to chocolate based treats to enhance the chocolate flavour. Lastly, vegetable oil just makes for a far moister cake!
Can I double the recipe?

Double Chocolate Mug Cake
IMPORTANT: For accuracy, I would recommend using the gram measurements provided, as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Ingredients
- 3 tbsp flour - regular all purpose
- 2 tbsp white sugar - brown okay too - see note 1
- 4 tsp cocoa powder
- ¼ tsp baking powder
- 1 pinch salt
- 3 tbsp milk - full fat preferred
- ¼ tsp instant coffee
- ½ tsp vanilla essence/extract
- 2 tbsp vegetable oil - I use canola, but any unflavoured oil will work
- 1½ tbsp 50% dark chocolate - coarsely chopped
Instructions
- In a microwave safe mug, combine the flour, sugar, cocoa powder, baking powder and salt and mix together with a fork.
- In a separate bowl/mug, mix the instant coffee into the milk, and mix together until the coffee is dissolved.
- Pour the milk/coffee mixture, vanilla essence and vegetable oil into the mug with the dry ingredients already in it. Mix until combined (do not overmix).
- Fold in the chocolate chunks.
- Microwave for 1 minute. Cooking time can vary depending on the strength of your microwave. Check your cake by poking a thin knife into it, and if it comes out clean it's done. If your cake needs a little longer, pop it into the microwave for another 10 seconds until done.
- Garnish with whatever you like! I like putting some whipped cream on top. Ice cream or fresh fruit work great too 🙂

It was a long day… and I was tired, and, well, I NEEDED chocolate. Nothing… I had not a cookie, a candy, anything but a bar of 75% chocolate and dark cocoa powder… and then I thought of you! MY HERO! I had remembered reading something in your recipes that said “quick treat without the fuss,” and I thought… maybe a quick fuss won’t require a lot of ingredients! VIOLA! You saved my day! It took about 8 minutes to throw it all together (chopping that chocolate bar took most of the time but it was wonderful “therapy!”), zapped it a minute and – all was well within my world! to say it is tasty is an understatement! It was a treat to ever sense: It tasted beyond description… it looked fantastic, the smell of that little cup filled my tiny kitchen, the warmth of the cup in my hands and the warm, fudgy cake in my mouth, and – ummmm the sense of hearing?
OH! That ding of the microwave telling me it was ready! ,Sigh…. But wait! There’s more! Days later, my neighbor was having a rough day… I whipped up a mug of comfort, and she was over the moon! That’s not where the story ends! My friend, your goodness is spreading. I have made up at least 30 mixtures, put them in a decorative container, tied them up with a pretty bow and sparkle, printed up in the instructions to add oil and milk (I use dried vanilla!), and given them as holiday gifts. Thank you so much for all the epicurean baking delights you have brought into my life!

You’re so welcome Dina 😀 Hmmm good question! I am not too sure to be honest as I’ve never tried it myself. It may work fine, you probably just need to keep a close eye on it while it’s cooking to make sure it doesn’t overcook 🙂
Alternatively, for small chocolate desserts you could try my lava cake recipe which should bake well in the oven function of the OTG 🙂
this was terrific. I was skeptical but it really works. partner was amazed I whipped it up in minutes (took about 10 by the time measured everything). One question, how do we get the gram measurements? I couldnt see a button to convert them from tablespoons.
So happy you and your partner enjoyed the mug cake Marcus! 😀 So usually for my recipes I always recommend using the gram measurements, but for this one in particular, because the measurements are all so small the variations in grams can be much higher (unless you have a very sensitive kitchen scale), so I would recommend sticking to the tbsp/tsp measurements for this recipe 🙂

After several tries of making mug cakes, this is the first one that actually came out moist yet done. Also this is the first one that rose and then set without deflating like a souffle. I used a 420ml large cup and it came up to about half full once done. I then added some caster sugar and a big ball of vanilla ice cream and it was delicious.

*I have a 700w microwave. I cooked it for 1 minute 10 seconds and it seemed done, but just to make sure I put it in for 15 seconds extra.

Rich, moist chocolate mug cake – it’s the best recipe on the internet I tell you!! No more dry, under-chocolately half raw mess like the majority of recipes out there. This was simply perfect.
I doubled the recipe (one for myself and my partner) and used 2 tbsp of chocolate chips (as mine are very small), and omitted the coffee (as I didn’t want any more of a ping in the evening!!). I microwaved for 1 min and 15 seconds, and topped it with a ball of ice cream – It was fabulous. Write this down in your cookbook so you don’t forget it, and pull it out whenever you’re craving cake in the evening!
