These strawberry oatmeal bars are the perfect blend of wholesome and indulgent! With a buttery oat crust, a layer of sweet, jammy strawberries, and a golden crumble topping, they’re a simple yet satisfying treat for any time of day.

What Makes These Strawberry Oatmeal Bars Special
Buttery
These bars start with a golden, buttery oat crust that also doubles as the topping. It’s rich, comforting, and gives the bars that perfect bakery-style bite.
Packed with Flavor
With fresh strawberries that bake down into a sweet, jammy strawberry filling (almost like a chunky strawberry jam!), every bite is bursting with fruity goodness. A touch of cinnamon in the crust adds a warm, cozy note that ties everything together.
Easy to Make
Made with simple pantry staples and just a few steps, these bars come together in no time. No fancy equipment or complicated techniques—just mix, layer, and bake!

How to Make Strawberry Oatmeal Bars
You can find the full list of ingredients for this recipe in the recipe card at the end of the blog post (for easy navigation, hit the ‘jump to recipe’ button at the top of the blog post). Here is a quick visual breakdown of the recipe (recipe video is also provided in the recipe card below).
Preheat your oven to 375°F (190°C) conventional. Lightly grease an 8×8-inch baking pan or baking dish and line it with a long sheet of parchment paper so it comes up the sides with a bit of overhang—this just makes it easier to lift the bars out later. Set aside for now.
In a large bowl, mix together the oats, flour, brown sugar, cinnamon, and salt until well combined. Pour in the melted butter and stir everything together until the mixture is evenly coated.

Scoop out about ¾ cup of the mixture and set it aside for the topping. Press the remaining mixture firmly into the bottom of your prepared tin in an even layer to form the crust. You can use your fingers or the bottom of a measuring cup to really pack it in. Set aside.

In a large bowl add the chopped strawberries along with the cornstarch, lemon juice, and sugar. Give it a good mix until everything is nicely combined.
Immediately spread the berries evenly over the crust, then sprinkle the reserved oat mixture over the top.

Bake in your preheated oven for 40 minutes, or until the top is golden and the strawberries are bubbling around the edges.
Let the bar cool completely in the tin (about an hour). Run a thin knife along the edges of the pan where there is no parchment to help release the bar, then use the parchment overhang to carefully lift it out. It may bend slightly as you lift, but it shouldn’t break apart. Slice and enjoy!

How to Store Your Strawberry Bars
Once your bars have cooled completely, slice them and arrange the pieces in an airtight container. Store at room temperature for up to 2 days—perfect for grabbing a bar as a quick snack between meals. If you’d like them to last a bit longer (up to about a week), pop the container in the fridge; just let the bars come back to room temperature before enjoying.

These are delicious! I accidentally added 2 tablespoons of lemon juice instead of 2 teaspoons, but my family thought the tartness was great!
