Strawberry Oatmeal Bars

These strawberry oatmeal bars are the perfect blend of wholesome and indulgent! With a buttery oat crust, a layer of sweet, jammy strawberries, and a golden crumble topping, they’re a simple yet satisfying treat for any time of day.

IMPORTANT: For accuracy, I would recommend using the gram measurements provided, as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.

Ingredients
 

Strawberry Oatmeal Bars

  • cups (135 g) quick cooking oats - rolled oats would work too
  • 1 cup (120 g) all-purpose flour
  • ½ cup (100 g) soft light brown sugar
  • ½ tsp ground cinnamon
  • tsp salt
  • 10 tbsps (140 g) unsalted butter - melted
  • 2 cups (332 g) chopped fresh strawberries
  • 1 tbsp cornstarch
  • 2 tsps lemon juice
  • 2 tbsps white granulated sugar

Instructions

  • Preheat your oven to 375°F (190°C) conventional (see note 1 if using a fan-forced convection oven). Lightly grease an 8x8-inch baking tin and line it with a long sheet of parchment paper so it comes up the sides with a bit of overhang—this just makes it easier to lift the bars out later. Set aside for now.
  • In a large bowl, mix together the oats, flour, brown sugar, cinnamon, and salt until well combined. Pour in the melted butter and stir everything together until the mixture is evenly coated.
  • Scoop out about ¾ cup of the mixture and set it aside for the topping. Press the remaining mixture firmly into the bottom of your prepared tin to form the crust. You can use your fingers or the bottom of a measuring cup to really pack it in. Set aside.
  • In a large bowl add the chopped strawberries along with the cornstarch, lemon juice, and sugar. Give it a good mix until everything is nicely combined.
  • Immediately spread the strawberry mixture evenly over the crust, then sprinkle the reserved oat mixture over the top.
  • Bake in your preheated oven for 40 minutes, or until the top is golden and the strawberries are bubbling around the edges.
  • Let the bar cool completely in the tin (about an hour). Run a thin knife along the edges of the pan where there is no parchment to help release the bar, then use the parchment overhang to carefully lift it out. It may bend slightly as you lift, but it shouldn’t break apart. Slice and enjoy!

Note 1. If using a convection oven with a fan, bake at 170°C (340°F) as the fan speeds up baking.
