Best Apples for Apple Cobbler
The type of apple you use makes a big difference to the flavor and texture of your cobbler (just like in apple pie!). Baking apples are the best choice because they stay firm when baked instead of turning mushy.
For this recipe, I love using Granny Smith apples. They’re crisp, hold their shape well, and their tart flavor pairs perfectly with the sweet, spiced filling. Other good options include Honeycrisp, Jonagold, Braeburn, or Royal Gala.
Try to avoid softer varieties such as Red Delicious or Golden Delicious, as they break down easily and can make the filling watery.

How to Make Apple Cobbler

Preheat oven to 400°F (200°C) conventional. Lightly grease a 9×13-inch baking dish and set aside.
Peel, core, and thinly slice the apples (about ¼-inch thick).

Transfer apples to a large pan and add in brown sugar, lemon zest, lemon juice, flour, cinnamon, ginger, nutmeg, allspice, salt, and vanilla. Mix well and let sit for 10 minutes until the apples release some juices.
10 minutes later, place the pan over medium heat and cook the apples for about 5 minutes, stirring frequently, until they just begin to soften (be careful not to overcook). Remove from heat.

Transfer the apples to the prepared baking dish and layer apples out evenly. Set aside for now.

Topping: In a large bowl, combine flour, sugar, baking powder, and salt. Whisk until well combined.
Add in cold butter and cut it into the flour mixture (either using your hands or a pastry cutter) until it resembles a sandy texture with some larger clumps of butter throughout.

Add in the milk and vanilla and using a wooden spoon, mix gently until the flour is moistened and you have a lumpy mixture (do not overmix as we don’t want it to turn into a dough).

Evenly place the topping over the apples, spreading it out by gently pushing the topping down (see video for demonstration).
In a small bowl, mix white sugar and cinnamon until well combined, then sprinkle over the topping.


Bake for 35 minutes, or until the top is golden brown and the apple filling is bubbling around the edges.
