Easy Apple Cobbler Recipe

This apple cobbler is pure comfort in dessert form! Juicy, cinnamon-spiced apples bubble beneath a golden, buttery topping that’s crisp on the outside and soft in the middle. It’s cozy, delicious, and so simple to make.

IMPORTANT: For accuracy, I would recommend using the gram measurements provided, as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.

Ingredients
 

  • 8 large Granny Smith apples - peeled, cored and thinly sliced (just under ¼ inch thick slices)
  • ½ cup (100 g) soft light brown sugar
  • 1 tsp lemon zest
  • ½ tbsp lemon juice - freshly squeezed
  • ¼ cup (30 g) all-purpose flour
  • tsps ground cinnamon
  • ¼ tsp ground ginger powder
  • ¼ tsp ground nutmeg
  • ¼ tsp ground all spice
  • ¼ tsp salt
  • ½ tsp vanilla extract/essence

Topping

  • 2 cups (240 g) all-purpose flour
  • ¾ cup (150 g) white granulated sugar
  • tsps baking powder
  • ¾ tsp salt - omit if using salted butter
  • ¾ cup (170 g) unsalted butter - cold and cut into small cubes
  • cup (80 g) milk - cold
  • ¾ tsp vanilla extract/essence

For Sprinkling on Top

  • 1 tbsp white granulated sugar
  • ½ tsp ground cinnamon

Instructions

  • Preheat oven to 400°F (200°C) conventional (see note 1 if using a convection oven with a fan). Lightly grease a 9x13-inch baking dish and set aside.
  • Peel, core, and thinly slice the apples (about ¼-inch thick).
  • Transfer apples to a large pan and add in brown sugar, lemon zest, lemon juice, flour, cinnamon, ginger, nutmeg, allspice, salt, and vanilla. Mix well and let sit for 10 minutes until the apples release some juices.
  • 10 minutes later, place the pan over medium heat and cook the apples for about 5 minutes, stirring frequently, until they just begin to soften (be careful not to overcook). Remove from heat.
  • Transfer the apples to the prepared baking dish and spread them out evenly. Set aside for now.
  • Topping: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add in cold butter and cut it into the flour mixture (either using your hands or a pastry cutter) until it resembles a sandy texture with some larger clumps of butter throughout.
  • Add in the milk and vanilla and using a wooden spoon, mix gently until the flour is moistened and you have a lumpy mixture (do not overmix as we don't want it to turn into a dough).
  • Evenly place the topping over the apples, spreading it out by gently pushing the topping down (see video for demonstration).
  • In a small bowl, mix white sugar and cinnamon until well combined, then sprinkle over the topping.
  • Bake for 35 minutes, or until the top is golden brown and the apple filling is bubbling around the edges.
  • Allow the cobbler to cool for about 20 minutes before serving.

Note 1. If using a convection oven with a fan, bake at 350°F (180°C) as the fan speeds up baking.
