IMPORTANT: For accuracy, I would recommend using the gram measurements provided, as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Ingredients
1¼cups(212g)semi-sweet chocolate - roughly chopped. I use 50% dark chocolate. I recommend using a good quality chocolate block.
¼cup(25g)unsweetened cocoa powder - I use Dutch processed
½cup(100g)white granulated sugar
½cup(160g)light corn syrup
1cup(240g)heavy cream
⅛tspsalt - omit if using salted butter
¼cup(56g)unsalted butter - cold and cubed
1tspvanilla extract/essence
Instructions
Add the chocolate, cocoa powder, sugar, cream, milk, and salt to a saucepan and place over medium heat. Stir continuously until the chocolate is fully melted and the mixture comes to a gentle simmer.
Let the sauce simmer for 3 minutes, stirring regularly.
Remove from the heat and stir in the cold, cubed butter and vanilla until fully incorporated and the mixture is smooth and glossy.
Use warm, or transfer to an airtight container and store in the fridge for up to 2 weeks. To reheat, warm gently over low heat on the stovetop or in the microwave.
